Springerle cookies originated in southwestern Germany in the 14th century. The name translates to "little jumper" or "little knight" in German.

Origins

The earliest surviving molds date back to the 14th century and are held in the Swiss National Museum.

The cookies were originally baked for religious holidays and secular occasions.

The earliest cookies depicted biblical scenes and were used to educate people who couldn't read or write.

Later, the cookies depicted holidays, births, weddings, and engagements.

Molds

The cookies were made in molds of wood, clay, or metal.

Molds were hand carved.

There are many mold designs available, including reproductions of historic molds.

Uses

The cookies were once used in place of Christmas cards.

Some families passed down their cookie molds through generations.

Baking

Historically, springerle were leavened with hartshorn salt, also known as baker's ammonia.
